RECIPE:

Beer Can Chicken

Famous Dave's Beer Can Chicken recipe takes a spin on the delicious classic recipe, using your favorite beer and Famous Dave's Chicken Rub and Honey Hickory BBQ Sauce.

SERVES: 4

Ingredients

1 Whole Chicken, rinsed and patted dry, giblets removed

1 stick Butter, softened

1 Tablespoon Famous Dave’s Chicken Rub Seasoning

1 Tablespoon Salt

1 Teaspoon Kosher Salt

.5 Teaspoon Black Pepper

1 12oz Can of Beer

Marinade:

1 cup Famous Dave's Honey Hickory BBQ Sauce

1/4 cup apple cider vinegar

1/4 cup olive oil

1 Teaspoon Famous Dave's Chicken Rub

Salt and pepper to taste

1/4 cup apple cider vinegar

1/4 cup olive oil

1 Teaspoon Famous Dave's Chicken Rub

Salt and pepper to taste

 

Preparation

  1. Prepare grill or smoker to 325 degrees
  2. Place softened butter into a small mixing bowl. Fold in Famous Dave's Chicken Rub, salts, and pepper until seasoning is incorporated into the butter.
  3. Place the chicken, breast side up, on a sheet pan. Without tearing the skin, slide fingers between skin and breast to loosen it. Work seasoned butter between skin and breasts on both sides. Rub remaining on the outside of the chicken, don't forget the legs and wings!
  4. Place a roasting pan in smoker or grill. Open the beer and set it in place on the pan. Place on the can so that the chicken stands upright. Add a half cup of water to the pan.
  5. Close cover on smoker or grill - maintain a temperature of 325 degrees. After 20 minutes, baste the chicken with the marinade created with Famous Dave's Honey Hickory BBQ Sauce. Continue to baste every 10 minutes until the chicken reaches an internal temperature of 170 degrees at the breast (about 1 to 1.5 hours)
  6. Remove chicken and place breast side up on a serving platter or clean pan. Cover loosely with tin foil and let it sit for about 10 minutes before carving.
  7. Pour juices from roasting pan into a saucepan and skim off any fat. Simmer until juices reduce. Add Famous Dave's Honey Hickory BBQ Sauce to taste and use to pour over carved chicken.
